Throughout my career I have opened and operated many styles of restaurants​. From casual burger joints to Michelin star restaurants. Through these experiences from market to market, I have learned one thing, America loves steakhouses. No matter what the dining trends are on any given day, American steakhouses seem to thrive. The Surgeon General has been warning people about the health risks of eating red meat since the mid-1980s, Americans do not care.

World Atlas recently stated, "​The United States and Canada are major consumers of red meat. Many North Americans follow what could be described as a meat and potato based diet.​"

Our Food Culture

Organic, sustainable, zero waste and garbage, farm to table. These are just a few of the terms we see used in marketing restaurants today. How much of these promises made to consumers are true is questionable. Our Food Style

A steakhouse guest has an expectation that a certain number of traditional dishes in an ala carte format will be a significant part of the menu. Finding a balance between traditional items and new exciting dishes is the key to exceeding customer expectations.
