Chef Lalo is no stranger to the limelight. As the Executive Chef of Charlie Palmer Steak, at the prestigious Four Season Hotel in Las Vegas, feeding celebrities was an everyday event for over a decade. He has been part of the Las Vegas Culinary Community for the past 20 years. He began his career at the exclusive Stirling Club in Turnberry Place, cooking there for several years. He has worked side by side with many well know chefs like Chef Vincent Poussel, Bradley Ogden, the Voltaggio brothers and Chef Andre Rochat. He assisted Chef Johnny Church in opening MTO in downtown Las Vegas.

In addition to his culinary skills, Chef Lalo has positioned himself as a top recruiter in Las Vegas assisting many well known establishments meet the challenge of staffing kitchens in this tough job market

Andre Rochat
Consulting Chef

Rochat was born in the French Alps and left home at 14 to apprentice at Leon de Lyon, a Michelin two-star restaurant. Later, he took a job at a hotel and followed that with a military assignment as chef to a French naval commander. Rochat departed France for Boston and cooked at several prestigious East Coast hotels. He eventually moved to Las Vegas.

Rochat became a pioneer in the Las Vegas dining industry introducing the city to its first freestanding fine dining experience. André’s in Downtown Las Vegas was the only freestanding gourmet option at the time, and it quickly became a hit with locals and tourists.

Rochat expanded with a second location, André’s Restaurant and Lounge at Monte Carlo. He also opened Alizé at the Palms Casino Resort. Both Alizé and André’s have been recognized by the Michelin Guide with the one-star rating and in 2014, the Nevada Restaurant Association gave Rochat a Lifetime Achievement Award.

The People

Great food is a given, if you cannot deliver a great product, you should not be in the restaurant business. Your team is the key to success. Great hospitality is the ability to change how people feel. Having the right team members in place is crucial for great hospitality. Both Richard and Chef Lalo have been a part of the culinary community in Las Vegas for over 20 years and are very well networked with the finest professionals in the city.

Staffing

In 2023 the hospitality industry's biggest challenge is staffing. The complete shutdown in 2020 due to the Covid Epidemic forced a lot of people to find new employment. Three years later, many people are finding themselves still looking for a long-term situation when it comes to their employment. Chef Lalo and I have assisted many people in our community in finding short term solutions. As a philosophy we have always followed the discipline of motivational management, this has led us to long-term relationships with our fellow hospitality professionals. To be perfectly transparent, we asked ourselves the question, "do we have the ability to staff a project of this magnitude in Las Vegas?" 

 

​To put our minds at ease, we decided to get on the telephone and actually call individuals that we think would be right for this project. Without disclosing the specifics of your endeavor, we asked these people if they would come to work for us if we had a new and exciting project on the Las Vegas Strip. The names below responded with great interest in joining our team. Please keep in mind, this list is a product of 4 hours of phone calls.
